Ingredients


  • 1/4 cup (44g) avocado, chopped
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, minced
  • 2 teaspoons onion, minced
  • 1/2 cup (115g) Greek nonfat, plain yogurt
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup (150g) (1/2 can) fat-free refried beans
  • 2/3 cup (165g) fat-free sour cream/fat free greek yogurt
  • 1/2 cup (115g) mild picante sauce
  • 1/4 cup (29g) light finely shredded taco cheese
  • 1 cup (175g) plum tomatoes, chopped
  • 1 tablespoon fresh coriander/cilantro, chopped
  • 1 tablespoon scallions, chopped

Method


  1. In small bowl, make guacamole by mixing first 7 ingredients.
  2. In a 9 inch pie plate layer the following:

  4. Layer 2: sour cream/greek yogurt
  5. Layer 3: guacamole
  6. Layer 4: picante sauce
  7. Layer 5: cheese
  8. Layer 6: tomatoes
  9. Layer 7: scallions/cilantro
