Ingredients


  • 1 onion, sliced
  • 1 zucchini/courgette, sliced
  • 1 summer squash, sliced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 2 new potatoes, cut into bite-sized pieces
  • 8 or more large mushrooms
  • 1/2 cup (70g) barbeque sauce

Method


  1. Preheat oven to 425°F (218°C).
  2. Precook potatoes slightly by microwaving them for 3 minutes on high.
  3. Spray a 9"x13" baking pan with nonstick cooking spray, or line with nonstick aluminum foil.
  4. Put all veggies into the pan and brush with barbeque sauce.
  5. Bake for 15 minutes and finish off under the broiler for 5 minutes to slightly blacken.
