Ingredients


  • 1/2 cup (113ml) fat-free Buttermilk, divided
  • 1/3 cup (75g) + 3 tablespoons Hot sauce, divided
  • 3 tablespoons white vinegar
  • 2 pounds (32oz) chicken tenders
  • 6 tablespoons flour
  • 6 tablespoons cornmeal
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 2 tablespoons fat-free sour cream

Method


  1. Whisk 1/4 cup (56ml) buttermilk, 3 tablespoons hot sauce, and vinegar in large bowl. Add chicken and marinade in refrigerator for at least 30 minutes.
  2. Mix flour, cornmeal, cayenne pepper and paprika in shallow dish.
  3. Preheat oven to 425°F (218°C). Remove chicken from marinade and toss with cornmeal mixture.
  4. Place chicken on large baking sheet lined with foil and sprayed with nonstick spray.
  5. Bake chicken for 20 minutes, carefully turning after 10 minutes.
  6. In small bowl, prepare additional buffalo sauce by combining 1/4 cup (56ml) buttermilk, 1/3 cup (75g) hot sauce and fat-free sour cream/fat free greek yogurt.
  7. Once chicken is ready, drizzle desired amount of buffalo sauce over chicken.
  8. Serve with carrot and celery sticks.
