Chicken (or Pork) Dijon

Ingredients


  • 1lb. (16oz) boneless, skinless chicken breasts
  • 1/2 cup (175g) Dijon mustard
  • 1/2 cup (175g) maple syrup
  • 2 tsp. red wine vinegar
  • rosemary-garlic spice blend, to taste
  • fresh rosemary sprigs, if desired

Method


  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix together mustard, syrup, and vinegar.
  3. Pour over chicken breasts that have been placed in a nonstick, foillined pan. Reserve a little sauce for basting.
  4. Sprinkle rosemary-garlic blend (to taste) and place a couple fresh rosemary sprigs between breasts.
  5. Bake for 30-35 minutes.
