Ingredients


  • 2 tbsp. lime juice
  • 3½ cups (175g) carrots, chopped
  • 1 tsp. chili powder
  • 1 tbsp. minced garlic
  • 4 cups (900ml) fat-free, reduced-sodium chicken broth
  • 1 cup (225ml) tomato juice
  • 1 tsp. fennel seed
  • 1 tsp. cumin, ground
  • 1 lb. (16oz) chicken breasts, skinless and boneless
  • 1 large-sized yellow onion, chopped

Method


  1. Combine all ingredients in a crock pot and cook for 6-8 hours on low or until chicken is cooked through.
  2. Shred chicken and serve.
