Ingredients


  • 1¾ cups (245g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup (56g) light margarine
  • 1/2 cup (125g) plain Greek yogurt
  • 2/3 cup (150g) sugar
  • 1/2 cup (4 eggs) egg whites
  • 2 tablespoons dark corn syrup
  • 3 ripe bananas, well mashed
  • 1/4 cup (125g) chopped walnuts
  • Cinnamon to taste

Method


  1. Grease and flour slow cooker. Sift together flour, baking powder, salt, and baking soda in small bowl; set aside.
  2. Cream butter and Greek yogurt in large bowl with electric mixer at medium-high speed until fluffy. Slowly add sugar, eggs, corn syrup, and mashed bananas. Beat until smooth. Gradually add flour mixture to creamed mixture. Add walnuts and mix well.
  3. Pour into slow cooker. Cover, cook on HIGH 1 ¼ to 1 ½ hours or until toothpick inserted into center comes out clean.
  4. Let cool, then invert bread onto serving platter. Slice and sprinkle with cinnamon to your taste.
