Ingredients


  • 3 ripe bananas, mashed
  • 2 egg whites
  • 2 tbsp. canola oil
  • 1/3-1/2 cup (67g-100g) sugar
  • 1/4 cup (56ml) skim milk
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1½ cups (210g) flour.

Method


  1. Preheat oven to 350°F (176°C).
  2. In a large mixing bowl, combine the first 5 ingredients and blend well.
  3. Gently blend in the dry ingredients and stir until moistened.
  4. Pour into a 5"x9" loaf pan coated with nonstick cooking spray.
  5. Bake for 50-55 minutes, until a knife comes out clean.
  6. Refrigerate leftovers.
