Ingredients


  • 1 cup yellow cornmeal
  • 1/2 cup (70g) all purpose flour
  • 1/2 tsp. salt
  • 1 tbsp. baking powder
  • 4 whites or 1/2 cup egg substitute
  • 1 cup (250g) fat-free plain yogurt
  • 1/2 cup (113ml) skim milk
  • 1/4 cup (50g) sugar (to reduce carbohydrate content you may substitute a non-calorie sweetener or omit sugar if a less sweet taste is preferred)

Method


  1. Preheat oven to 350°F (176°C).
  2. Spray an 8 or 9" iron skillet or pie pan with nonstick cooking spray.
  3. Mix all ingredients in a bowl and stir.
  4. Pour into prepared dish.
  5. Bake for 30-35 minutes.
