Ingredients


  • 2 cups (50g) pitted dates
  • 1 cup (225ml) hot water
  • 1 tsp. baking soda
  • 2 egg whites
  • 1/2 cup (100g) sugar
  • 1 tsp. vanilla
  • 1½ cups (210g) flour

Method


  1. Preheat oven to 350°F (176°C).
  2. Place dates in small bowl. Add baking soda to water and pour over dates.
  3. In a food processor, blend egg whites, sugar, and vanilla.
  4. Add about 1/4 of the date/water mixture and process until fairly smooth.
  5. Add flour and process until blended.
  6. Add the remaining date/water mixture and process briefly for 15-30 seconds. Stir to be sure mixture is thoroughly blended.
  7. Pour into a 5"x9" loaf pan coated with nonstick cooking spray.
  8. Bake for 60-75 minutes until knife comes out clean.
  9. Cool and slice. Can be served with nonfat cream cheese or ricotta.
