Ingredients


  • 4 medium potatoes
  • 1/2 medium onion
  • 1 zucchini/courgette, optional
  • Chives
  • Salt to taste
  • Pepper to taste
  • Greek No-Fat, Plain Yogurt (we’ve used Fage 0% Greek yogurt)
  • Applesauce

Method


  1. Grate the potato and onion. Add grated zucchini/courgette, if desired.
  2. Place mixture in a towel and wring out as much excess moisture as you can.
  3. Season mixture as desired with chopped chives and salt and pepper to taste.
  4. Spray a skillet with cooking spray.
  5. Heat pan, then add mixture in one large pancake. Press mixture down slightly so that ingredients are evenly distributed in pan.
  6. Allow mixture to brown, then carefully flip pancake and brown other side.
  7. If you like, you may place pancake under broiler, watching carefully until it reaches desired level of crispness.
  8. Top pancake with your choice of toppings: applesauce, fat-free Fage Greek yogurt.
  9. Enjoy!
