Ingredients


  • Approximately 2 pounds (32oz) small red or new potatoes (or 4-5 medium red potatoes)
  • 1/2 cup (75g) frozen peas, thawed
  • 1 red pepper, chopped
  • 1-2 green onions/spring onion, minced
  • 1/4 cup (58g) “Light” mayonnaise (3.5g fat per tbsp.)
  • 1/4 cup (65g) fat-free Greek yogurt
  • 1-2 tsp. Dijon mustard
  • 2-3 tbsp. fresh dill, minced or 2-3 tsp. dried dill
  • 1/4 tsp. garlic powder
  • salt and fresh ground pepper, to taste

Method


  1. Boil potatoes until just cooked. Cool, (don’t peel) and cut into quarters or eighths.
  2. In a large bowl, mix mayonnaise, yogurt, mustard and spices.
  3. Add the rest of the ingredients and toss. Chill and serve.
  4. To further lower fat content, use low fat or fat-free mayonnaise or fat-free Greek yogurt.
