Ingredients


  • Four 4 oz. (113g) boneless skinless chicken breasts
  • 1/4 cup (85g) 100% maple syrup
  • 1/4 cup (62g) Dijon mustard (may use 1 tbsp. of “whole grain” Dijon mustard with 3 tbsp. Dijon mustard, if desired)
  • Juice from 1/2 lemon (1-2 tbsp.)
  • 1 tbsp. dried whole rosemary

Method


  1. Add chicken breasts to a gallon size zip top bag.
  2. In a small bowl, mix together marinade ingredients and pour the marinade over the chicken, reserving 2-3 tbsp. for later basting.
  3. Turn chicken to coat and let the chicken marinate for one hour or more in the refrigerator.
  4. Remove chicken from the marinade and discard marinade.
  5. Heat a grill and grill chicken for ten minutes on each side, until cooked through.
  6. Toward the end of grilling, baste each chicken breast with reserved marinade.
  7. Enjoy at a cookout with your favorite potato or macaroni salad prepared with fat-free mayonnaise.
  8. Marinade may also be used for pork or turkey tenderloin.
