In early fall, we have so many wonderful vegetables available. Make delicious use of them by cooking up this vegetarian dish. This recipe can be served as a side dish or over your favorite pasta or brown rice for a meal.

Ingredients


  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1/2 Tablespoon olive oil
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 large eggplant/aubergine, peeled and cubed
  • 3 medium tomatoes, chopped
  • 2 medium zucchinis/courgettes, chopped

Method


  1. In a large stock pot, sauté onions and garlic in olive oil for 2-3 minutes.
  2. Add peppers and sauté for another 2 minutes.
  3. Add remaining ingredients and cover.
  4. Simmer for 45 minutes - 1 hour or until vegetables are soft.
