Ingredients


  • 1 Onion, large, chopped
  • 2 Garlic cloves, minced
  • 1/2 tablespoon olive oil
  • 3 Tomatoes, medium, chopped
  • 1 - 14 ounce (396g) can Artichoke hearts quartered, in water or brine (no oil)
  • 3/4 cup (169ml) white wine
  • 1 pound large shrimp, peeled and deveined
  • 1 pound whole grain linguine, cooked

Method


  1. Sauté onion and garlic in olive oil in non-stick skillet for a few minutes.
  2. Add tomatoes, artichoke hearts (drained) and white wine. Simmer for 10 min.
  3. Add shrimp and cook until shrimp are pink and cooked through. Toss with linguine and enjoy.
