South of the Border Taco Soup

This is an easy one-dish meal for a cool evening. It can be made with “extra-lean” ground beef or ground turkey. Serve with a salad and fruit.

Ingredients


  • 1 lb. (16oz) 95% fat-free ground beef or ground turkey
  • 1 onion, minced
  • 1 green pepper, chopped (optional)
  • 15 oz. (425g) can “no salt added” corn or 1½ cups frozen corn
  • 15 oz. (425g) can creamed corn (does not actually contain cream!)
  • 1 can diced tomatoes, no added salt, or fire-roasted, if desired
  • 15 oz. (425g) can pinto beans (rinsed)
  • 1/4 cup (55g) salsa
  • 2 cups (450ml) chicken broth (lower sodium)
  • 1/4 cup (62g) fat-free ranch dressing
  • 1/2 pkg. taco seasoning mix
  • Optional topping*: Baked, lower fat corn chips and fat-free or low-fat shredded cheddar cheese

Method


  1. In a stock pot prepared with nonstick cooking spray, sauté onions for a few minutes, add beef or turkey, and brown until cooked through.
  2. Add rest of ingredients and heat until warm.
  3. Serve in bowls and top with crumbled chips and some shredded cheese, if desired.
  4. *Optional toppings not included in nutrition analysis.
