Ingredients


  • 2 cups (450ml) tomato or vegetable juice, low sodium, if desired
  • 3 tomatoes, quartered
  • 1 green pepper, quartered
  • 1 cucumber, peeled and seeded
  • 1/2 onion
  • juice from 1/2 lemon
  • juice from 1 lime
  • 1 tbsp. red wine vinegar
  • 3/4 tsp. each of tarragon and basil ¼ cup fresh parsley
  • dash or 2 hot pepper sauce
  • dash or 2 ground cumin
  • black pepper, to taste

Method


  1. Combine all ingredients in a food processor and pulse until desired consistency.
  2. Chill for at least 2 hours.
  3. Garnish with yogurt or nonfat sour cream/greek yogurt and serve.
  4. Makes 4 cups.
