Ingredients


  • 400g (3 cups) wholemeal/whole grain pasta shapes (we used Fusilli)
  • 2 x 160g (6oz) tins tuna in water, drained
  • 100g (1 cup) of spinach
  • 1 can sweetcorn, drained 
  • 75g (½ cup) wholemeal/whole grain breadcrumbs
  • 1 x 500ml (16oz) jar of tomato sauce 
  • 100g (¾ cup) 10% fat/reduced fat mozzarella cheese, grated or cut into small pieces 
  • Black pepper

Method


  1. Warm the oven to 200C (180C for a fan oven) .
  2. Cook the pasta in a large pan (following the pack instructions) until cooked but still firm - “al dente”.
  3. Add  the spinach to the pan of pasta for the last minute and allow to wilt.
  4. Drain and transfer the pasta and spinach to a large baking dish.
  5. Mix in the tuna, sweetcorn and tomato sauce and season with black pepper.
  6. Top with the mozzarella and finally with the breadcrumbs.
  7. Bake for at least 30 minutes or until bubbling.
  8. Serve.
