Ingredients


  • 2 ripe bananas
  • 2½ cups (250g) bran-flake cereal
  • 1 cup (225ml) skimmed milk
  • 2 tbsp. applesauce
  • 2 egg whites
  • 1 tsp. vanilla extract
  • 1 cup (140g) flour
  • 1/3-1/2 cup (75g-113g) sugar
  • 1 tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 cup (44g) raisins, if desired

Method


  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, mash bananas with a fork, stir in the rest of the ingredients in the order given, and mix well.
  3. Prepare a muffin tin with nonstick cooking spray.
  4. Divide mix among 12 muffins.
  5. Bake for 20-30 minutes or until a knife comes out clean.
  6. Cool and eat. Refrigerate leftovers.
