Ingredients


  • 1 cup (350g) peach preserves
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 1 small clove of garlic, minced
  • 4 scallions, chopped
  • 1/3 of a sweet red bell pepper, diced
  • 1/8 tsp red pepper flakes (optional)
  • 6 skinless, boneless, chicken breast halves

Method


  1. Preheat oven to 350°F (176°C).
  2. Mix all ingredients, except chicken, in a medium sized bowl.
  3. Place chicken in a pan and cover with mixture.
  4. Bake for 30 minutes or until chicken reaches an internal temperature of 165°F (73°C)
