Ingredients


  • 8 cups (600g) prewashed and torn romaine lettuce
  • 1 lb. (16oz) precooked and sliced boneless, skinless chicken breasts
  • 1 cup (115g) fat-free croutons
  • 1 oz. (28g) fat-free shredded Parmesan cheese
  • 1/2 cup (175g) fat-free creamy Caesar dressing
  • 1/2 tsp. freshly ground black pepper
  • 1 fresh lemon

Method


  1. Place lettuce and croutons into a large bowl and add dressing, tossing well to coat.
  2. Squeeze lemon into lettuce mixture and add cheese; toss again.
  3. Divide mixture on to 4 serving plates.
  4. Place thinly sliced or diced cooked chicken and divide equally atop each serving.
