Ingredients


  • 4 boneless, skinless chicken breasts
  • 3/4 cup (263g) salsa
  • 2 tbsp. Dijon mustard (more if you like it spicy!)
  • juice from 2 fresh limes

Method


  1. Preheat oven to 350°F (176°C).
  2. Place chicken in a baking dish prepared with nonstick spray or in a pan lined with nonstick aluminum foil.
  3. In a small bowl, mix salsa, mustard and lime juice and pour over chicken.
  4. Place in the refrigerator for 1 hour or more.
  5. Cover and bake for 35-40 minutes.
  6. Serve with brown rice (there will be plenty of sauce to flavor the rice).
