Ingredients


  • 1/2 tablespoon olive oil
  • 1/2 cup (25g) celery, chopped
  • 1/2 cup (25g) carrots, chopped
  • 1/2 cup (75g) onions, chopped
  • Salt and pepper to taste
  • 14 ounce (396g) can diced tomatoes
  • 14 ounce (396g) can fat-free, low sodium chicken broth
  • 1/2 cup (10g) fresh basil leaves, torn
  • 1 tablespoon tomato paste
  • 1/2 teaspoon thyme leaves
  • 1 large potato, cubed
  • 1 pound boneless skinless chicken breast

Method


  1. Heat oil in large saucepan over medium heat and add celery, carrot, onion.
  2. Cook for 5-10 minutes; add salt and pepper.
  3. Stir in the remaining ingredients, adding the chicken last.
  4. Bring to a boil and then simmer uncovered for 25 minutes or until chicken reaches internal temperature of 165°F (73°C).
  5. Take out chicken and cut into bite size pieces; then add back to stew and simmer for an additional 5 minutes.
  6. Serve with crusty bread.
