Ingredients


  • 8 oz. (226g) carton egg substitute/8 egg whites, slightly beaten
  • 2 green onions/spring onions, minced
  • 1 tomato, chopped
  • 1/2 red pepper, chopped
  • 1 green pepper, chopped
  • 1-2 cups (175g-350g) mushrooms, sliced
  • 1 cup (175g) red potato, cooked and sliced
  • 1/2 cucumber, peeled and sliced
  • 4 oz. (113g) can green chiles
  • 1/2 tsp. garlic powder
  • 1/4 tsp. white pepper
  • salt to taste, if desired

Method


  1. Prepare a sauté pan with nonstick cooking spray.
  2. Sauté all vegetables until crisp tender.
  3. Pour egg substitute/egg whites over the vegetables and cook, covered, over low to medium heat until egg is fully cooked and puffy.
