Cinnamon Baked Oatmeal

Ingredients


  • 3 cups (420g) dry oatmeal (quick or regular)
  • 2-4 tablespoons brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1½ cups (338ml) skim milk
  • 1 whole egg
  • 1/2 cup (125g) plain nonfat yogurt
  • 1 teaspoon vanilla extract
  • 2 cups (350g) mixed berries, fresh or frozen

Method


  1. Preheat oven to 350 degrees (176°C).
  2. Prepare an 8 inch by 8 inch glass baking dish with nonstick cooking spray.
  3. In a medium bowl, combine and mix all ingredients, except fruit, thoroughly.
  4. Pour 2/3 of the batter into the baking dish. Then layer the fruit on top of batter and cover with the final third of the batter.
  5. Bake for 30 minutes.
  6. Cool, cut into 6 pieces (or cut into 9 pieces for a smaller serving) and serve.
