Ingredients


  • 1 pound “Extra Lean” ground beef (at least 95% fat-free)
  • 1/2 cup (63g) seasoned breadcrumbs
  • 2 tablespoons fat-free milk
  • 2 egg whites
  • 3 tablespoons onion, minced
  • 8 oz (226g) jellied cranberry sauce
  • 3/4 cup (170g) chili sauce
  • 1½ teaspoons lemon juice
  • 1½ tablespoons brown sugar

Method


  1. Preheat oven to 350°F (176°C).
  2. In a large bowl mix ground beef, bread crumbs, milk, egg whites, and onion.
  3. Roll into small balls (approx. 1.5 inch) and place on cookie sheet that has been lined with non-stick foil.
  4. Bake for 20-25 minutes or until internal temperature has reached minimum of 160°F (71°C); turn meatballs halfway through cooking time.
  5. In a saucepan, combine remaining ingredients and bring to a simmer.
  6. Add meatballs and simmer for 30 minutes.
  7. Can add to a crockpot to keep warm and serve with toothpicks.
  8. Makes 24 meatballs.
