Ingredients


  • 1-2 lbs. (16-32oz) boneless turkey breast with skin removed
  • 1½ cups (263g) mushrooms, minced
  • 3 green onions/spring onions, minced
  • 1 slice whole-wheat bread (processed into crumbs)
  • 1/3 cup (75ml) sherry
  • 1 tsp. dried basil

Method


  1. Preheat oven to 325°F (162°C).
  2. In a medium sauté pan prepared with nonstick cooking spray, sauté mushrooms, onions, sherry, and basil for 3-4 minutes.
  3. Stir in bread crumbs and remove from heat.
  4. Place turkey breast on a rack in a 9"x13" pan.
  5. Spread or pat stuffing mixture over the turkey.
  6. Cover with foil and bake according to package directions (up to 2 hours; less for individual turkey tenderloin pieces).
  7. Uncover for the last 30 minutes.
  8. Let stand 10 minutes before slicing.
