  • 2 cups (280g) all-purpose flour
  • 2/3 cups (133g) sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (100g) chopped fresh cranberries
  • 2/3 cup (150ml) 2% milk
  • 6 ounce (170g) container of non-fat Greek yogurt
  • 1 tablespoon canola oil
  • 1 teaspoon grated orange rind
  • 1/2 teaspoon vanilla extract
  • 2 egg whites
  • Cooking spray

Method


  1. Preheat oven to 400°F (204°C) and spray muffin tin with cooking spray
  2. Spoon flour into measuring cup and level with a knife.
  3. Combine flour, sugar, baking powder and salt in a large bowl and stir well.
  4. Stir in cranberries and make a well in the center of the mixture.
  5. Combine milk, applesauce, rind, vanilla and egg whites; add to flour mixture, stirring just until moist.
  6. Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400 degrees for 18 minutes or until muffins spring back when touched lightly in the center. Remove muffins from pan immediately; place on wire rack.
