Ingredients


  • 3 ½ cups (420g) of flour
  • 1 ¼ cups (250g) sugar
  • 2 ¼ teaspoon baking soda
  • 1 ¼ teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ginger
  • 1 16 ounce (453g) can whole berry cranberry sauce
  • 1 16 ounce (453g) can pumpkin
  • 1/4 cup (60ml) canola oil
  • 1/2 cup (147g) unsweetened apple sauce
  • 2 large egg whites
  • 1 tablespoon pecans, chopped
  • Nonstick cooking spray

Method


  1. Preheat oven to 350 degrees (176°C).
  2. Combine all ingredients in a large bowl. Mix well.
  3. Spray two 9x5x3 loaf pans with nonstick spray.
  4. Pour into pans. Bake for 1 hour, or until bread tests done with a wooden toothpick.
