Ingredients


  • 1½ lbs. (24oz) sweet potatoes or yams, peeled and thinly sliced
  • 2-3 tbsp. orange or apricot or apple preserves
  • 1/2-3/4 cup (113ml-169ml) orange juice
  • Mini marshmallows (optional/not included in analysis)

Method


  1. Preheat oven to 350°F (176°C).
  2. In a small bowl, combine preserves and orange juice.
  3. Place sliced sweet potatoes in a casserole dish.
  4. Pour juice mixture over potatoes and cover with foil or top.
  5. Bake for 45 minutes, stirring half way through.
  6. Top with mini marshmallows during final 10 minutes of baking, if desired.
  7. You may also microwave in a microwave safe dish for 20-25 minutes, stirring occasionally, until potatoes are tender.
