Easy Fiesta Fish

This is a simple, but delicious recipe for white fish. Leftovers are perfect for fish tacos.

Ingredients


  • 1 small red pepper, sliced thin
  • 1 small onion, sliced thin
  • Nonstick spray
  • 2 pounds (32oz) cod fish or other extra lean white fish
  • 1 cup (225g) fat free salsa
  • 3/4 cup (86g) Sargento Reduced Fat Cheddar

Method


  1. Preheat oven to 350°F (176°C).
  2. Spray skillet with nonstick spray.
  3. Sauté onions and peppers in skillet for 5-10 minutes.
  4. Place fish in large 13x9 pan and add onions and pepper mixture on top.
  5. Spread salsa on top of fish and then sprinkle cheese.
  6. Bake for 30-35 minutes or until fish flakes easily.
  7. Garnish with fat-free sour cream/fat free greek yogurt.
