Ingredients


  • 1 cup (175g) chopped sun-dried tomatoes, moist but not packed in oil
  • 14.5 oz (411g) of bow tie pasta
  • 6 cups (1350g) baby spinach
  • 1 can of cannellini beans
  • 2/3 cup (165ml) fat-free Italian dressing
  • 2 cloves of garlic, crushed
  • 1/2 cup (50g) fat-free Parmesan cheese
  • Pepper or crushed red pepper optional

Method


  1. Cook pasta according to directions. Drain and rinse with cold water and put in a large bowl.
  2. Add in remaining ingredients and mix well.
  3. Cover and chill for 2 hours before serving.
