Ingredients


  • 32 wonton wrappers
  • 2 13 oz. (368g) cans artichoke hearts (rinse and drain)
  • 1/2 red pepper, minced
  • 1/4 cup (25g) Parmesan cheese
  • 1/3 cup (76g) fat-free mayonnaise
  • 2 oz. (56g) can sliced ripe olives (finely chopped)
  • 3/4 tsp. garlic powder

Method


  1. Preheat oven to 350°F (176°C).
  2. Blend artichoke hearts, mayonnaise, Parmesan cheese and garlic in food processor until smooth.
  3. Remove blade and blend in red pepper and olives.
  4. Divide evenly (about 1 tbsp. each) between wrappers.
  5. Pull wrappers up at corners and press to close and create a pocket.
  6. Bake for 20-25 minutes until edges are brown.
  7. Serve warm. Leftovers may be reheated or microwaved.
