Fish Chowder

Ingredients


  • 2 pounds (32oz) cod or haddock fillet
  • 2 oz (56g) diced extra-lean turkey bacon (approximately 4 slices)
  • 2 teaspoon canola oil
  • 2 sliced medium onions
  • 1 cup (225g) chopped celery
  • 3 diced large potatoes
  • 1 crumbled bay leaf
  • 4 cups (900ml) skim milk (try ultra-filtered fat free milk or evaporated skim milk-it’s creamier!)
  • 1 Tablespoon light tub margarine
  • Pepper to taste

Method


  1. Simmer fish in 2 cups (450ml) of water for 15 minutes.
  2. Drain off and reserve broth.
  3. Saute turkey bacon in canola oil in large pot until crisp.
  4. Add onions and sauté until light golden brown.
  5. Add fish, celery, potatoes, and bay leaf.
  6. Measure reserved fish broth plus enough water to make 3 cups (675ml) liquid. Add to pot and simmer for 40 minutes.
  7. Add milk and margarine and simmer additional 5 min. Pepper to taste.
