Ingredients


  • 1/2 cup (100g) sugar
  • 1/2 cup (70g) flour
  • 1 cup (150g) pinto beans, rinsed and drained
  • 1 egg white
  • 2 tbsp. oil (use 2 tbsp. applesauce to lower the fat content to less than 1 g per serving)
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1/4 tsp. cloves
  • 1 tsp. cinnamon
  • 1 cup (175g) minced raw apple (include skin)
  • 1/3 cup (58g) raisins

Method


  1. Preheat oven to 375°F (190°C).
  2. Blend apples in food processor until minced. Remove.
  3. Blend all ingredients except apples and raisins in the food processor until smooth.
  4. Stir in apples and raisins.
  5. Pour into an 8"x8" glass baking dish prepared with nonstick cooking spray.
  6. Bake for 50 minutes or until a knife comes out clean.
