Ingredients


  • 12 lasagna noodles
  • 2 cups (200g) shredded nonfat mozzarella cheese
  • 1/4 cup (25g) grated reduced-fat Parmesan cheese
  • 12 oz (340g) 99% lean ground turkey
  • 2 cans (1 pound each) tomato sauce
  • 1 can (1 pound) crushed tomatoes, unsalted
  • 2 tablespoons tomato paste
  • 2 cups (150g) sliced fresh mushrooms
  • 1 medium onion, chopped
  • 2 teaspoons garlic, minced
  • 2½ teaspoons dried Italian seasoning
  • 15 oz (425g) nonfat ricotta cheese
  • 1 cup (225g) reduced-fat cottage cheese
  • 1/4 cup (25g) reduced-fat grated Parmesan cheese
  • 2 teaspoons dried parsley

Method


  1. Place ground turkey meat in a pot. Cook over medium heat, stirring to a crumble, until the meat is no longer pink. Drain off any fat.
  2. Add the rest of the sauce ingredients to the browned meat, increase the heat to high and bring to a boil.
  3. Reduce the heat to low, cover and simmer for 25 minutes. Set aside.
  4. Combine all of the filling ingredients in a large bowl and stir well. Set aside.
  5. Coat a 9x13 pan with nonstick cooking spray.
  6. Spoon 1 cup (200ml) of the sauce over the bottom of the pan. Lay 4 of the uncooked noodles over the bottom of the pan, arranging 3 of the noodles lengthwise and 1 noodle crosswise (you may need to break this one to make it fit).
  7. Top the noodles with half of the filling mixture, 3/4 cup (75g) of the mozzarella, and 1.5 cups (300ml) of the sauce. Repeat the noodles, filling, mozzarella, and sauce layers.
  8. Top with the remaining noodles, sauce, Parmesan, and mozzarella.
  9. Cover the pan with aluminum foil and bake at 350°F (176°C) for 45 minutes.
  10. Remove the foil and bake for an additional 15 minutes. Let cool for about 5 minutes, cut, and serve!
