Ingredients


  • 1 pound ground beef 95%/5% or leaner
  • 2 cups (450g) diced potatoes (smaller and thinner will cook faster)
  • 1½ cups (225g) frozen mixed vegetables
  • 1/2 cup (88g) diced tomatoes
  • 1/2 cup (26g) diced onion
  • 1/2 cup (90g) diced green pepper
  • 1/2 teaspoon chopped serrano pepper (optional)
  • 1 clove of garlic, crushed
  • 1/2 teaspoon oregano
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 cup (225ml) of water

Method


  1. Brown the ground beef in a large skillet at medium heat turning occasionally.
  2. Once beef is browned add in onion, green pepper, serrano pepper, tomatoes, garlic, oregano, cumin and salt. Stir and cook for 5 minutes.
  3. Add in potatoes and water. Simmer for 15 minutes or until potatoes are soft.
