Ingredients


  • 16 oz (453g) egg substitute
  • 1/2 cup (113g) sugar
  • 16 oz (453g) fat free sour cream/fat free greek yogurt
  • 16 oz (453g) nonfat cottage cheese
  • 2 – 12 ounce (340g) cans evaporated skim milk
  • 2 tablespoons vanilla
  • 3 teaspoons cinnamon, divided
  • 12 ounce (340g) no-yolk egg noodle, cooked

Method


  1. Preheat oven to 350°F (176°C) degrees and spray 9x13 pan with nonstick cooking spray.
  2. Combine first 6 ingredients in a large bowl.
  3. Mix in only 1½ teaspoons of cinnamon.
  4. Add noodles and stir all ingredients together.
  5. Spread into pan evenly, cover and place in refrigerator overnight.
  6. Next day, sprinkle remaining 1½ teaspoon of cinnamon on top of kugel.
  7. Bake for approximately 1 hour, 40 minutes.
