Ingredients


  • 3 green tomatoes cut into 1/4 inch slices
  • 1 cup (125g) panko bread crumbs
  • 1/2 cup (113ml) low-fat buttermilk
  • 1 large egg white
  • Non-stick cooking spray
  • 1/2 teaspoon hot sauce
  • 1 teaspoon salt
  • 3/4 teaspoon pepper

Method


  1. Preheat oven to 450°F (232°C). Place baking sheet in oven.
  2. Combine panko, salt, pepper, and hot sauce in a shallow dish and set aside.
  3. Whisk together buttermilk and egg in a large bowl.
  4. Place tomato slices into bowl with buttermilk mixture.
  5. Using a slotted spoon, remove tomatoes from mixture and add to the panko.
  6. Make sure tomato slices are evenly coated with panko mixture.
  7. Remove hot baking pan from oven and spray with cooking spray. Place coated tomato slices on heated pan and lightly coat them with cooking spray.
  8. Bake for 15 minutes.
  9. Turn slices over, spray tomato slices with cooking spray and place back in the oven for 10 additional minutes.
  10. Tomatoes should be crispy and golden brown. Season as needed. Serve immediately. Pair with your favorite fat free dipping sauce or chutney!
