Ingredients


  • 1 pound fresh okra pods, stemmed and cut into 3/4 inch slices
  • 1 cup (120g) stone ground yellow cornmeal
  • 1/2 cup (113ml) low-fat buttermilk
  • 1 large egg, lightly beaten
  • Non-stick cooking spray
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method


  1. Placed rimmed baking sheet in the oven. Preheat oven to 450°F (232°C).
  2. Combine cornmeal and cayenne pepper in a shallow dish and set aside.
  3. Whisk together buttermilk and egg in a large bowl. Add okra, salt, and pepper
  4. Stir to combine and let sit for about 3 minutes to coat okra.
  5. Using a slotted spoon, remove okra from mixture and add to the cornmeal.
  6. Dredge okra in cornmeal.
  7. Remove hot baking pan from oven and spray with cooking spray. Place coated okra on heated pan and lightly coat the okra with cooking spray.
  8. Bake for 25 minutes, stirring once.
  9. Stir and spray with cooking spray again. Then bake for an additional 10 minutes.
  10. Okra should be crispy and golden brown. Season as needed. Serve immediately.
