Ingredients


  • 1 cup (180g) quinoa
  • 2 cups (450ml) water
  • 2 cups (200g) nonfat shredded cheddar cheese
  • 2 cups (350g) broccoli, chopped
  • 1 cup (50g) carrots, shredded
  • 1 cup (8 eggs) egg whites
  • 1 teaspoon pepper

Method


  1. Cook quinoa according to box using 1 cup (180g) quinoa and 2 cups (450ml) water.
  2. Once quinoa is cooked and drained, put quinoa into mixing bowl, add cheese, and stir.
  3. Add broccoli, carrots, egg whites, and pepper to quinoa and cheese mixture. Stir well.
  4. Spread mixture into 9x13 baking pan. Cook for 25-30 minutes at 425˚F (218°C).
