Ingredients


  • 3 large russet potatoes
  • 32 oz. (907g) fat free, less sodium chicken broth
  • 2 cups (450ml) of water
  • 1/2 cup (113ml) skim milk
  • 8 wedges of The Laughing Cow Spreadable Wedges, Light, Garlic & Herb Cheese or any flavor of preference
  • Salt and pepper to taste

Method


  1. Wash, peel and cut potatoes into small chunks.
  2. In a large pot add chicken broth and potatoes. Use the water to make sure the potatoes are submerged.
  3. Boil potatoes until tender then drain liquid in a colander.
  4. In a mixing bowl add the potatoes, skim milk and beat with a mixer on medium speed for 1 minute.
  5. Add half of the cheese and beat on medium speed until blended then add the other half.
  6. Add salt and pepper to taste.
