Southern Black-Eyed Pea Patties

An interesting twist to traditional veggie burgers. Serve in a pita pocket with tomato, cucumber and nonfat sour cream/fat free greek yogurt or salsa.

Ingredients


  • 2/3 cup (93g) oats
  • 2½ cups (375g) black-eyed peas, cooked
  • 3 sliced green onions/spring onions
  • 2 egg whites
  • 1 teaspoons cumin
  • 1½ teaspoons chili powder
  • 1/8 teaspoons cayenne pepper
  • 1/4 teaspoons salt
  • 1 tablespoon oil

Method


  1. Process oats in a food processor to a powder.
  2. Take out 3 tbsp oat powder and save for later use.
  3. Add all other ingredients except oil to the food processor and process to a thick paste (add a tiny bit of water if needed).
  4. Remove and make 6 patties. Roll in reserved oat powder and sauté in oil on a skillet. Cook through and brown on each side.
