Ingredients


  • 6 cups (1950g) cooked, mashed sweet potatoes, from fresh, boiled and with skin removed
  • 1/2 cup (113ml) skim milk
  • 1 cup (200g) artificial sweetener or other non-calorie sugar substitute
  • 1/4 cup (2 eggs) egg whites
  • 1 tbsp. vanilla
  • 3 optional toppings (not included in analysis):
  • 1/2 cup (100g) brown sugar and 1/2 cup (100g) artificial sweetener
  • 2 cups (100g) mini marshmallows
  • Cinnamon and nutmeg

Method


  1. Preheat oven to 350°F (176°C)
  2. Boil sweet potatoes until done, let cool and remove skin.
  3. Mash and whip with all the rest of the liquid ingredients.
  4. Pour into a non-stick sprayed, prepared 9x13 inch casserole dish.
  5. Bake for 30 minutes.
  6. If an optional topping is used, add the topping in the last 10 minutes of cooking.
