Ingredients


  • 1 can of tuna in spring water, drained
  • 2 tbsp low fat Greek style yogurt
  • 1 tbsp chopped fresh coriander/cilantro
  • Ground black pepper
  • 4 slices wholemeal/whole grain bread or 2 rolls
  • ¼ cucumber, diced
  • ¼ red bell pepper, diced
  • handful fresh salad leaves
  • Scrape low fat mayonnaise - if needed

Method


  1. Mix with the yogurt with the coriander/cilantro and season with black pepper. Flake in the tuna and add the diced cucumber and red pepper.
  2. Spread the 2 slices of bread with a little low-fat mayonnaise (to help the filling stick to the bread) and then divide the tuna mixture over the slices.
  3. Top the filling with salad leaves and the remaining bread slices and serve.
