Ingredients


  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 red bell pepper
  • 2 jalapeno peppers
  • 1 (15 ounce)(425g) can black-eyed peas
  • 1 (15 ounce)(425g) can black beans
  • 1 (15 ounce)(425g) can white sweet corn
  • 1 (16 ounce)(453g) bottle Fat Free Italian dressing
  • 4 roma tomatoes
  • 1 bunch coriander/cilantro

Method


  1. Remove membranes and seeds from peppers.
  2. Dice yellow, orange, and red peppers and place in a large plastic bowl
  3. Finely chop jalapenos and place into the same bowl
  4. Drain and rinse the black beans, black-eye peas, and corn and add to peppers.
  5. Add Fat Free Italian dressing and stir well.
  6. Cover and marinate in refrigerator for at least 8 hours.
  7. Remove from fridge and drain excess liquid from mixture.
  8. Dice tomatoes and coriander/cilantro and stir into mixture.
