Ingredients


  • 1 onion, minced
  • 1 green pepper, chopped
  • 3/4 to 1 lb. (12-16oz) ground turkey (extra-lean 99% fat-free)
  • 1 cup (175g) frozen corn
  • 16 oz. (453g) can pinto beans, rinsed
  • 4 oz. (113g) can fire-roasted green chiles (mild)
  • 8 oz. (226g) can tomato sauce (no added salt if desired)
  • 1/4 cup (55g) salsa
  • 1-2 tbsp. chili powder
  • 3-4 tbsp. water
  • 1 cup (120g) cornmeal
  • 2½ cups (560ml) water
  • 1/4 tsp salt, if desired

Method


  1. Preheat oven to 375°F (190°C).
  2. Sauté onions and peppers in a pan prepared with nonstick cooking spray.
  3. Add ground turkey and sauté until no longer pink.
  4. Add corn, beans, chiles, tomato sauce, salsa, chili powder, and water and stir.
  5. Pour filling into an 8”x8” or 9”x9” baking dish sprayed with nonstick cooking spray.
  6. In a small saucepan, combine water, cornmeal and salt.
  7. Bring to a boil then reduce heat and stir for 1 minute, until topping thickens slightly. Spread over filling.
  8. Bake for 30 minutes.
