Ingredients


  • 1 cup (225ml) fat-free vegetable broth
  • 3/4 cup (124g) whole-wheat couscous
  • 1 cup (175g) or more broccoli florets
  • 1-2 carrots, shredded
  • 8 mushrooms or more, sliced
  • 2 green onions/spring onions, sliced
  • 1/2 cup (75g) peas, frozen
  • 1 cup garbanzo beans, less salt, rinsed
  • 1 clove garlic, minced
  • 1 tsp. canola or olive oil

Method


  1. Bring broth to a boil.
  2. Add couscous. Remove from heat and let stand for 5 minutes, covered.
  3. In a sauté pan, sauté garlic with oil, then add vegetables and beans.
  4. Stir-fry for about 5-8 minutes.
  5. Combine veggie mixture into couscous and serve.
