Ingredients


  • 1/2 cup (70g) unbleached flour
  • 4 teaspoons dried parsley
  • 1/4 teaspoon ground black pepper
  • 2½ pounds (8oz) baking potatoes (about 4 medium)
  • 2 small yellow onions, thinly sliced and separated into rings
  • 1 garlic clove
  • 1/2 cup (50g) grated Parmesan cheese
  • 1½ cup (340ml) skim milk

Method


  1. Combine the flour, parsley and pepper in a small bowl. Mix together and set aside.
  2. Scrub the potatoes before slicing them thinly (about less than 1/4 inch).
  3. Spray nonstick cooking spray onto the bottom and sides of an 8x12-inch baking dish.
  4. Line the bottom of the pan with a layer of the sliced potatoes, overlapping the slices slightly. Then add a layer of the onion rings over the potatoes (half of the sliced onion rings) along with 1/2 of the garlic clove sprinkled on top. Sprinkle this layer with half of the flour mixture. Then evenly sprinkle 2 tablespoons of the Parmesan cheese over it. Repeat this step to add one more layer of potatoes, onions, garlic, flour, cheese.
  5. Pour the milk over the potatoes and sprinkle with the remaining Parmesan.
  6. Cover the dish with aluminum foil and bake at 350°F (176°C) for 45 minutes. Remove the foil and bake for an additional 30 minutes or until the potatoes are tender and the top is a nice golden brown color. Let sit for 5 minutes before serving.
