Spicy Chicken with Sesame Noodles

Ingredients


  • 1 1/2 pounds (24oz) boneless, skinless chicken breast
  • 12 oz (340g) linguine noodles
  • 2 colored bell peppers (red, yellow or orange), cut into thin strips
  • 2 cups (350g) broccoli crowns, chopped
  • 4 green onions/spring onions, cut stems into 1/2” pieces, dice green tops
  • 1-2 tablespoons Cajun spice mix
  • 1 tablespoons onion powder
  • 1 tablespoons garlic powder
  • 1-2 teaspoons salt
  • 1 tablespoons black pepper
  • 1/2 cup (115g) sweet chili sauce
  • 2 tablespoons sesame oil
  • Cooking spray

Method


  1. Heat water for pasta, cook as directed, drain and toss with sesame oil while noodles are hot. Let cool while cooking the chicken.
  2. Cut chicken into ¾–1” cubes.
  3. Add Cajun spice, onion & garlic powder, salt and pepper to zip top plastic bag.
  4. Add chicken to bag, shake well to coat.
  5. Spray a wok or large frying pan with pan spray, put on medium high heat and cook chicken until done.
  6. Remove from pan and spray pan again.
  7. Add peppers, sauté for 5 minutes, then add broccoli and green onion/spring onion stems. Sauté until broccoli is tender.
  8. Toss vegetables and chicken with the noodles, mixing well.
  9. Add the sweet chili sauce and green onion/spring onion tops, toss again. Serve.
